Fried chill prawns

Fried chilli prawns : 






Ingredients : 


Prawns
 
16 medium sized

Lemon juice

 2 tbsps

Chilly sauce

1 tbsp 

Salt
 
to taste

Cornstarch 

6 tbsps 

 Oil

4 tbsps 
 
Spring onion


Capsicum                                 

1 medium sized 

Green chillies 

4 to 6 

Ginger                                

2 inch 

Garlic

6 to 8 cloves 

Soy sauce
 
2 tbsps
 
white pepper
powder           


1/2 tsp

 Ajinomoto
(optional)


1/2 tsp 

Sugar

1 tsp 

Chicken stock

1 cup 


Method of preparation :

  1. Clean, devein, wash and dry prawns thoroughly with a kitchen towel. Mix one tablespoon of lemon juice, chilli sauce ,salt to taste with prawns.
  2. Roll the prawns in four tablespoon of cornstarch. Heat sufficient oil in a pan,add cornstarch coated prawns and deep fry for a minute.Remove and drain onto an kitchen towel or tissue paper.
  3. Wash, trim, chop spring onions and reserve some greens for garnish. Wash, halve, deseed and cut capsicum. Wash,remove stem and diagonally slice green chillies. Peel and finely chop ginger and garlic Blend remaining cornstarch in half a cup of water.
  4. Heat four tablespoon of oil in a pan, add chopped ginger, garlic sliced green chillies stir fry. Add chopped spring onions and continue to stir fry for a couple of minutes more.
  5. Add soy sauce, white pepper powder, ajinomoto(optional), sugar, salt to taste and immediately stir in the stock. 
  6.  Add fried prawns,capsicum strips and stir fry for a couple a minutes,stirring continuously .
  7. Stir in blended cornstarch and cook for a minute more and until the sauce coats the prawn. Stir in remaining lemon juice.
  8. Serve hot garnished with chopped spring onion greens.
