Aloo Tikki :
Aloo tikki is an indian snack made out of boiled potatoes, peas and various spices. Here, "Aloo" means Potatoes and "Tikki" means small cutlet. It is usually served with green chutney and yogurt.
Ingredients :
- 3 potato / aloo boiled
- 1 chili finely chopped
- 1 tsp ginger garlic paste
- ¼ tsp turmeric
- ½ tsp red chilli powder
- ½ tsp cumin powder
- ½ tsp aamchur
- Salt to taste
- 2 tbsp mint / pudina chopped
- 2 tbsp coriander chopped
- 2 tbsp corn flour
- oil for frying
Method of preparation :
1. Pressure cook potatoes for 4-5 whistles and drain off the water as soon as pressure releases. In a large mixing bowl take 3 boiled and grated potato.
2. Add 1 chilli, 1 tsp ginger garlic paste, ¼ tsp turmeric, ½ tsp chilli powder, add ½ tsp cumin powder.
3.Also add ½ tsp aamchur, and salt to taste.
4. Further, add 2 tbsp mint, 2 tbsp coriander and add 2 tbsp cornflour and mix well.
5. Mix well forming a soft dough.
6. Grease hand with oil and prepare ball-sized tikki.
7. Fry in oil until it turns golden brown. Flip over and cook on both sides.
8. Serve hot with green chutney or tamarind chutney.
Sabudana vada :
Sabudana vada is a mixture of sago ( sabudana ), peanuts and boiled potatoes which is fried. Sabudana vada is usually served in fast. It is served with chutney.
Ingredients :
- sabudana 200 grams
- 2 medium sized potato
- 1/2 cup peanuts
- 3 green chilies
- 2 tsp cumin powder
- salt to taste
- small bunch coriander
Method of preparation :
1. Soak sabudana in water for 4-5 hours.
2. Roast peanuts in a pan and grind it.
3. Boil, peel and mash potatoes.
4. In a bowl mix sabudana, powdered peanuts, mashed potatoes, Coriander, Green chillies, salt to taste and mix them properly.
5. Make small balls out of the dough.
6. Heat oil in a pan. Fry the vadas in oil until golden brown.
7. Serve hot with chutney.
Samosa :
Samosa is a baked triangular shaped filled with aloo mixture. It's a very famous street food in indian continent. It is mostly served with chutney.
Ingredients :
- 5-6 potatoes boiled, peeled and mashed
- 1 cup green peas
- 1/2 cup groundnuts
- 2 tsp crushed coriander seeds
- 1 tsp cumin seeds
- 2 chopped green chilies
- 2 to 3 finely chopped mint leaves
- small bunch of chopped coriander leaves
- 1 tsp chat masala
- 1 tsp turmeric powder
- 3 cups of maida
- salt to taste
- oil for frying
- 3 cups of water
Method of preparation :
For samosa dough :
1. In a bowl add maida, salt to taste and oil and mix together.
2.Make soft dough by rubbing the mixture with oil or ghee.
3. After making dough of the above mixture keep it aside for 30 minutes.
For samosa filling :
1. Heat oil in a pan. Add cumin seeds, ginger and mix well. Later, add green peas and saute for 2 minutes.
2. Add red chili powder and chat masala. Saute for a few seconds.
3. Add potatoes, add salt to taste and mix well. Add coriander leaves and keep the mixture aside.
Assembling samosa filling and dough.
1. Now divide the dough into similar shaped balls. Roll the balls into roti shape and cut into a semicircle.
2. Fold into semicircles and seal it using water. Stuff the filling and seal the edges using water. similarly, make remaining.
3. Heat oil in a pan. After oil is hot add samosa and fry them on a low flame. Rotate them to the other side to fry the side as well.
4. Remove samosa after it becomes golden fried on a serving plate.
5. Serve them with chutney or sauce.
Dahi vada :
Dahi vada is a chaat mostly popular in north india. It is served with dahi.
Ingredients :
- 1 cups urad dal
- 10 grms ginger
- 2 - 3 green chilies
- 2\3 baking powder
- Small bunch coriander
- salt to taste
- oil for frying
- 450 grams plain yoghurt
- 3 cups water
- 3/4 tsp powdered and roasted cumin
Method of preparation :
1. Soak urad dal overnight or for at least 4 hours. Drain off most of the water from the lentils. Add it in your grinder. Add the ginger and green chilies and blend.
2. The batter must be smooth. You can add more water if necessary. When you stir it should be fluffy.
3. Heat oil in a wok.
4. Scoop up around an amount of batter and using your thumb to help ease it off and slide it off into the hot oil. Do for 2-3 batches. Fry for 5-6 minutes or until golden.
5. Add the warm vada in water and let them soak for 20 minutes. After 20 minutes remove water by pressing them between your palm. keep them aside in a plate.
6. Whisk yogurt, water, salt, sugar and roasted cumin powder
until smooth.
7. Place vada in a serving bowl. Spoon over yogurt cream, tamarind and coriander chutney.
8. Your dahi vada ready to serve.
Misal pav :
Misal pav is a very popular dish from maharashtra. It consists of spicy curry and a pav and it is served with sev, chopped onions. It is served as a breakfast. Misal pav is very famous street food all overy maharashtra.
Ingredients :
- 2 cup moth beans ( matki )
- 4 tsp turmeric
- salt to taste
- 2 tsp oil
- 2 inch chopped ginger
- 2 chopped onion
- 2 clove garlic
- 3 tbsp oil
- 1 tsp jeera ( cumin )
- 2 curry leaves
- 1 tsp red chili powder
- 1 tsp turmeric
- 1 tsp coriander powder
- 1 tsp garam masala
- small piece jaggery (gud )
- 2 cup farsan / mixture
- 6 pav
- 1 lemon
Method of preparation :
1. In a large pan heat 3 tbsp oil and 1 tsp jeera and 2 curry leaves.
2. Add 1 tsp turmeric, 1 tsp chilli powder, 1 tsp coriander powder and 1 tsp garam masala.
3. Stir fry on low flame till spices turn aromatic.
4. Now add prepared masala paste and saute well.
5. Add in cooked matki, small piece jaggery and salt to taste and mix well.
6. Also add 5 cup water and stir continuously.
7. Boil for 10 minutes or till misal is cooked completely.
8. In a plate, take misal add some sev over it.
9. Top with chopped onions and coriander.
10. Your misal is ready to serve with pav.
